Fryer Setup and Temperature Control

Heat the oil to 350-375°F (175-190°C). This temperature range is crucial because it's hot enough to make the poori puff immediately upon contact with the oil, but not so hot that it burns the exterior before the interior cooks through. If you don't have a thermometer, you can test the temperature by carefully dropping a small piece of bread into the oil—it should sizzle immediately and turn golden brown in about 60 seconds.
